Question:What would you recommend as a substitute for cottage cheese in a casserole-type recipe? Will crumbled tofu work? Or would I have to season it somehow? Thanks!Article continues below Answer:Yes, fresh tofu literally crumbled with your hands becomes very similar in texture to cottage cheese or a ricotta cheese. You could also whip the tofu into a smoother consistency by placing it in a food processor or blender. Then the tofu becomes more like a cream cheese in texture. You could season the tofu with tahini and/or miso paste. You might also add some fresh herbs to the tofu as well. Mix these ingredients directly into the tofu. |
