Question:

I'm looking for some kid friendly tofu recipes and not having much luck.Do you have any suggestions Beverly?

Answer:

Tofu is such an amazing food, I don't know how I survived so many years without it being a part of my diet. Its uses are endless, so I'm sure that I can come up with a few suggestions that would appeal to your family.

Regular firm tofu can be crumbled, sauteed with vegetables, and seasoned with herbs and spices for a delicious and quick tofu scramble. Make a mock egg salad by crumbling the tofu, mixing it with finely diced veggies such as celery, green onion, carrots, or pepper, turmeric for color, vegan mayo, and seasonings. Mock tuna salad is made in the same manner with frozen, slowly thawed, and crumbled tofu, adding powdered kelp instead of turmeric, finely diced veggies, vegan mayo, and seasonings.

Crumbled tofu can also be sauteed alone or with veggies to replace meat in most sauces, stews, entrees, and various fillings for sandwiches, burritos, and wraps. It is a great substitute for ground meats, sausages, poultry, and fish in many recipes, either crumbled, cubed, or sliced. Try marinating cubes or pressed slices in your favorite stir-fry sauce, barbecue sauce, or gravy, and then bake them in the sauce for incredible flavor and easy clean up. Baked or fried tofu is a tried and true favorite in my house, whether it is marinated, breaded, or simply seasoned.

You can always use pureed silken tofu in desserts, baking, and smoothies. I could go on and on.
