Question:Do you have a veggie recipe for "chicken salad sandwiches?"Answer:There are many soy based substitutes for chicken available to vegans/vegetarians such as tempeh, Textured Vegetable Protein, seitan, and tofu. Each one imparts its own unique flavor and texture in a recipe. Generally when preparing sandwich fillings, I reach for tofu because I always seem to have it on hand and it has a great chewy texture. To mimic a chicken salad, begin by baking or sautéing cubes of tofu until golden brown. Toss them with any combination of diced onion, celery, green onion, peppers, carrots, or pickles. Add any of your favorite herbs, a little nutritional yeast flakes, vegan mayonnaise to moisten, and some salt and pepper. Serve it with your favorite veggies on your choice of bread or pita. |
