Eat Your VeggiesEat Your Veggies is the first published cookbook by Vegan Chef, Beverly Bennett. I'll say right away that the reason I love this cookbook is because the recipes are easy to make and the food tastes great. Real down home cooking too. Bev's recipes are the ones I've memorized and have made so often that I often catch myself wondering where I got the recipe and remembering "Oh yeah, this is one of Bev's recipes."

My favorite recipe to date is the cornbread. I can whip up a batch of corn muffins or corn bread in less than 5 minutes (plus baking time). Whenever Steve and I find time to cook, I almost always throw in a batch of the corn muffins to have with dinner. We eat the leftovers for breakfast. These muffins are what I call warm and friendly, comfort food. Eat Your Veggies also contains a recipe for vegan powdered sugar, which is now a staple in our house. We use it on our french toast and to make frosting.

The book contains 225 recipes from soup, salad and appetizers, to main courses and desserts. There are interesting drink recipes, sauces, sides, condiments, and sandwiches. She leaves no stone unturned.

Another great thing about Eat Your Veggies is that it is shipped electronically, which means no trees are harmed. Then you can peruse the recipes you like, print out just the ones you want, and do what I do, which is to tape them to my cupboard while I'm cooking. It works great.
