Get Off Gluten

Let's just say to start off with, I was not looking forward to trying any of these recipes. But once I got into reading the story behind the book, it reminded me of one person in my life - my mother. She had the symptoms of the little girl described in the cookbook, so I went to her armed with the recipes in this book. Driven to make her my test subject for these recipes, but with her being a huge skeptic about gluten intolerance, it was difficult. Also, the association with gluten free food being bland, flavorless and really hard to prepare was another hurdle. Get Off Gluten proved this to be far from the truth. It was a joy to read and the recipes I tried were very flavorful.
The first recipe to go up on the chopping block was something I really have missed since going vegan - Macaroons. This recipe was a perfect example how fast and easy they are to prepare. They were chewy and crispy, and nobody would know that they were vegan and gluten free.
The next recipe I tested was the Chocolate Chip Flax Cookies. They were quite good and incredibly chewy. I was surprised that they didn't taste to "flaxy" because of the large amount of flaxseed in them, but talk about cookies that are a nutritional powerhouse! Now this is the prefect way to get those elusive omega- 3's!
I also tried the Breaded Tofu Cutlets, which can be time consuming if you follow the recipe exactly. I did not freeze the tofu, just to make the recipe a little bit quicker. The results were very crispy on the outside and moist and juicy on the inside. This was incredibly flavorful, and just delicious! Well worth the effort, I will make this again and again.
And now for the big one that everybody wants -gluten free bread that isn't like a rock, but instead is fluffy and light. Crispy on the outside, and moist on the inside, the taste is definitely different than bread containing gluten but delicious in its own right. The bread is definitely not for beginner chefs - it's time consuming and a lot of work the first time around, but once you get a good starter going, it's much easier.
Get Off Gluten gives people with gluten sensitivities, or celiac disease, a chance at "normal" foods that taste really good. JoAnn Farb proves that you can live a life eating normal feel-good comfort foods, while being gluten free and vegan as well! Most people would feel as though eliminating gluten, dairy, eggs, etc. would close so many doors. Get Off Gluten throws the doors wide open!
