Book ReviewNutritional Yeast Cookbookby Joanne Stepaniak Review by Shayla Roberts I was really excited to receive this book, The
Nutritional Yeast Cookbook, because at the time I
pretty much used nutritional yeast only on my popcorn.
I had heard of the author, Joanne Stepaniak, and of a
wonderful recipe of hers called Crock Cheeze. I
looked like I would finally get to try it. What I was
surprised about was that this book wasn't only
"cheese-like" recipes. In it I would learn to use
nutritional yeast to add a fullness of flavor to just
about all of my favorite dishes.
For example, I haven't had an alfredo or white sauce for years now. It just never occurred to me to try to find a vegan version. This book not only has one, it is simply divine. Also, it is not only for pasta. I used it in pot pies, and even added mushrooms for a "cream of mushroom" type sauce for stroganoff and green bean casserole. It's both easy and versatile. The Crock Cheeze was, of course, everything I'd hoped it would be. Between it and the Melty White Cheeze recipe, I had chip dips, sauces for macaroni, even sandwich spreads. I especially loved these sauces as a topping for a variety of steamed vegetables. I never realized how much I missed "cheese" on my food. Of particular note are the Phenomenal French Toast, Spaghetti and Wheatballs, and Roast Breast of Seitan Turkey. The nutritional yeast in these recipes, and a number of others, is really just an accent flavor and blends in very well. The chapters are divided into types of food, such as breakfasts, sauces and dips, entrees, and cheeze spreads. The first chapter discusses what nutritional yeast is and what the health benefits of it are. There is also included a glossary of special ingredients and a list of mail order suppliers, and Red Star Nutritional Yeast nutritional facts. In all, I feel more confident about being able to supply my family with a reliable source of B12. With the book, I've not only learned more recipes centered around nutritional yeast, I'm am an expert at being able to sneak it in to just about all of my 2-year-old's meals. I highly recommend The Nutritional Yeast Cookbook to any vegan family interested in delicious recipes, by the well-known Joanne Stepaniak, incorporating this nutritious ingredient. |
