The Vegetarian Mother's Cookbook
by Cathe Olson
Review by Erin Pavlina

Vegetarian Mother's CookbookCathe Olson, author of Simply Natural Baby Food, has a second book out that is just as fabulous as the first. The Vegetarian Mother's Cookbook is a collection of over 300 vegetarian and vegan recipes that are packed with the nutrition you need when you are pregnant and breastfeeding. The book contains nutrient analyses, freezable entrees, wheat-free, soy-free, dairy-free, and egg-free options, recommended dietary intakes, and so much more.

Cathe really knows how to pack nutritious foods into one recipe for maximum health benefits. When you are pregnant or breastfeeding your baby you want to be absolutely sure you're getting everything you need so your baby does too. This book makes it easy! With recipes like Millet Veggie Burgers, Potato-Kale Quiche, and Coconut Tempeh Stew you will be in heaven while supplying wonderful nutrition to your baby.

Although the book is technically for vegetarians, don't let the title fool you. Many of the recipes are already vegan and it's easy to veganize the others. This book would also make a great shower gift to the pregnant women in your life, vegan or not!
