Vegan Nutrition with Jill Nussinow, MS, RD

How does fiber affect the nutritional content of a product?

Fiber is non-digestible and non-caloric. Foods that are higher in fiber tend to be digested and absorbed more slowly than those with lower fiber content. I am not sure why you are asking this question but you may be interested in knowing that generally foods with more fiber have a lower glycemic index than those that don't. Fiber is important and it's recommended that you get 20-30 grams each day. All whole plant foods contain fiber with beans and other legumes, berries, whole grains and seeds as some of the best sources. One cup of beans, depending upon type, contains 10 to 15 grams of fiber per cup. Fiber is essential for a healthy digestive system and is best obtained from "real" food and not supplements.
