We are vegan but my kids don't really like seeds. They are all fussy so I would find it hard to get seeds in to stuff other than bread/cookies. Should I buy a coffee grinder for flaxseeds? Do you use any vegan supplements? Here in the UK there aren't any vegan product enriched with flax? Advice?

Definitely grind the seeds or they'll just slide right on through;) You can grind a little at a time with a coffee grinder or grind at least 2 cups (i.e. 16oz, ??g) in a blender. They go off quickly so if you grind a lot, store them in the freezer. Ds will eat ground flax on "buttered" toast or mixed with applesauce. Dh eats them on his Weetabix with soy milk. Ds will also take flax oil like medicine, but dh can't - lol.

We slip them into fruit smoothie drinks each morning. I grind them in a little food processor.

I add 2 tbsp of ground flaxseed to oatmeal made with soymilk and raisins (all of which creates a good source of iron, in reference to your other posting :) ). Because the flaxseed has binding properties, you'll need to use more liquid than you would normally use to make oatmeal (maybe an extra 2 or 3 tbsp of liquid for each tbsp of flaxseed).

You can also add a bit of flaxseed oil to salad dressing. Walnuts and dark, leafy green vegetables are also good sources of Omega-3.

I drizzle flax oil on dd's waffle (under the syrup) and top her veggies and oatmeal with it. She can never even tell that it's there. You can also mix it into apple sauce, use it in salad dressings, and even mix some with jam before spreading it on a pb and j.
