My daughter refuses to eat any of the yummy healthy pancakes I've tried from several different cookbook and internet recipes. I don't like buying the boxed mix because there is aluminum in it. Can someone point me toward a recipe for a plain (not blueberry, buckwheat,etc.) pancake that is similar to a box mix. I think I can "slip it to her" without notice, if it looks and tastes similar. Plus, I'd rather make my own. I just don't want them wasted because she's so finicky about it. Any help is appreciated!!

I haven't used store bought pancake mixes ever, that I can remember, but the pancake recipe from the Joy of Cooking is a pretty normal pancake recipe & would probably pass as similar.
It calls for white flour, a little sugar, baking soda (or powder - I can't remember), etc. I use sucanat instead of sugar & it is such a small amount that I doubt she would notice the difference. It also calls for eggs & milk, of course. I use Ener-g egg replacer & Silk soy milk instead. I use canola oil rather than melted butter, but you could use melted vegan margarine. With substitutions, it can be easily made vegan & still tastes like 'normal' pancakes. I'd post the recipe, but we aren't supposed to post other people's copyrighted recipes - sorry!

I usually make all kinds of modifications to recipes, but with this recipe you really don't have to, it's great just the way it is. It's really important to follow the directions about not overmixing the batter, resist the temptation to eliminate all the lumps. And the amount of baking powder seems like a lot, but give it a try because these pancakes turn out really well.
Using all-purpose flour will make pancakes most like the box mix. If that is successful you could try using half all-purpose, half whole wheat pastry flour (pastry flour is better than regular whole wheat, it'll keep the pancakes light and fluffy) to make it a bit healthier next time (your daughter probably won't be able to tell that you've slipped some whole wheat flour in).
I use:
Florida Crystals for the sugar - it's most like regular sugar
Rumford Aluminum-Free baking powder
Canola oil
Sea salt
Soymilk (plain or vanilla)
1/2 tsp cinnamon

I tried it, and they really are superior! Also, thanks for mentioning what KIND of baking powder. I had NO idea that baking powders contain aluminum!! I made a bunch extra and stuck them in the freezer. That's the "school morning" breakfast. Either zap one in the microwave, have one minute oatmeal, or cold cereal and toast with jam. After getting the right stuff, I've been making pancakes all morning!
