first birthday cake

My son's first birthday is coming up. I am looking for suggested recipes for his birthday cake. I would like to keep the sugar to a minimum.

What cookbooks do you have that are vegan? Perhaps we can suggest something from one of them.

There are also a few mixes on the market that will work. Which do you prefer? And what area do you live in?

There is an awesome chocolate cake recipe in the Voluptuous Vegan cookbook, it doesn't use sugar but instead calls for 1 1/2 cups maple syrup. Hope this helps!
