View Full Version : Buttermilk substitute

Ok all, my biggest weakness since becoming a vegan is Hardee's buttermilk biscuits. I've tried vegan recipes over the net but they just don't get results anywhere near the Hardee's biscuits I used to eat.

I've found some mock recipes on the net for Hardee's and they all include buttermilk or mayonaise. What can I do to substitute for these?

Also, which soy or rice milks are the most flavorless? I need something that doesn't have a residual beany or vanilla flavor in these biscuits.

And does anyone here like biscuits and gravy? (white sausage gravy). I use gimme lean or Yves for the sausage (which are great) but I still can't find a good imitation flour/water/oil/soymilk recipe for the liquid part of the gravy.

Any help would be appreciated.

What I've done for buttermilk in muffin and pancake recipes is to add 1 tsp. of vinegar per 1c of soymilk. Worked great!

As for a "non-beany" flavor soymilk, I really don't know. I started drinking Silk a couple months before I became vegan and have been drinking it ever since. I personally don't think it's "beany" but I don't really know what else to compare it to! I have used it in baked goods and nonvegans haven't been able to tell a difference, so I think it should work fine for your biscuits.

My DH really missed his sausage biscuits and gravy! We use the Gimme Lean sausage and to make the gravy part this is what I do...

I take a couple Tablespoons of Earth Blance, melt in a saucepan. Stir in an equal amount of nonbleached flour. Slowly whisk in original flavor soy milk. I usually start with 1 cup, but add it in slowly while whisking constantly. I usually keep the heat at about medium. I add salt/pepper to taste, add the browned Gime Lean sausage and scoop it over biscuits.

We like the biscuits in the How it All Vegan cookbook.

Could you please tell me how much 1c of soymilk is? Is it an American measure (I'm in Scotland)?

Orcadia, 1c is a short hand way of saying 1 cup which is 8 0z. I hope that helps.
