This is the best vegan cake I have ever made. It always comes out delicious! Make it the day before you need it, it doesnt taste very good right after baking for some reason.

Vanilla Cake

2 cups water
3/4 cup sunflower or other light oil (any oil really)
2 Tablespoons white vinegar
4 teaspoons vanilla

3 1/2 cups sifted flour (I sift 2 times for a springy cake)
2 cups sugar
1 teaspoon salt
2 teaspoons baking soda

vegetable cooking spray

Preheat over to 350 deg F. Combine first 4 ingridients in a large bowl. Mix together last four ingridients in another bowl and sift together well. Add the dry mixture to the liguid and mix well with either an electric mixer or by hand till all lumps are gone. Let sit 5 minutes.
Pour into a 13x9x2 baking pan coated with vegetable oil spray, or cupcake tins (fill 2/3 full). Do not bang air bubbles out of this cake.
Bake about 40 minutes or untill a wooden pick comes out clean. the cake springs back, and tops are slightly golden.
Frost with your favorite iceing.

That looks good. I haven't made a vanilla cake yet that came out tasting anything other then like bread-cake.

I've never tried adding vinegar. That might just do it!!

Yes, the reason I keep posting this recipe (its all over the web)is because it is so dreamy! Its the only vegan cake recipe I have ever tried that is light and springy and cake-like, not at all bread like. Fill the cake pans a little less than 3/4 full because the vinegar makes it raise up a bit.
I think the secret is to really sift the flour very well before measuring, and also I sift the dry indridients all together 2-3 times before mixing with the dry.
Many folks wow the fact that someone in the 2000s still makes cake from scratch and think it is very difficult. Its very easy and inexpensive. You probably have all the ingridients in your cupboard right now.

If I've got vinegar, then I'm in business. Haven't seen vinegar for years though, so it's probably buried in the cupboard somewhere.

I also don't have a sifter, but should have one soon. I don't think I realized how important it is to sift those dry ingredients.

After I make this cake, I'll let you know if it came out right for me. If it works for me, it will work for anyone!

Thanks for the awesome recipe! My birthday party is tomorrow night and I was in a scramble to get a vegan cake baked. When I saw your post I decided to try something new (I usually make Chocolate Mousse Cake from the Voluptuos Vegan cookbook). The cake turned out tasting pretty darn good to me, but your post says it will be even better tomorrow! For frosting, I just mixed margarine, powdered sugar, and orange juice in an electric mixture until it was the right consistency. Yum! Thanks again-
