Hello Veggie Mom's
Just wondering if anyone had a really tasty veg chili
recipe they would not mind passing on? I have tried a few
but have not found one that the family really likes!!
By the way, how many children do you all have? Etc.

1 teaspoon olive oil
1 cup finely chopped onions
6 cloves garlic, minced
1 medium bell pepper (colour of your choice)
2 tablespoons chili powder
1 canned chipotle chile in adobo, minced
1 teaspoon adobo sauce (from the chipotle chile)
2 (15 ounces) cans black beans, drained
2 (14.5 ounces) cans diced tomatoes, undrained
1 (4.5 ounces) can chopped green chilies, drained
salt and pepper
Saute garlic, and onion over medium to medium high heat until tender - but not browned (you can use oil or some vegetable broth) about 3 minutes.
Add green peppers and saute for an addition minute or two.
Add chili powder, minced chipotle, adobo sauce, black beans (can use pinto beans too), diced tomatoes and liquid and chopped green chilies.
Add salt and pepper to taste - if needed.
Reduce heat; cover and simmer stirring occasionally for at least 30 minutes. The taste gets more complex if you let it sit longer.
The chipotle peppers add a really nice smoky richness to the taste of the chili.
I like to serve it with corn chips and a bit of the Tofutti Sour Supreme.
It can be garnished with a little bit of fresh cilantro (if you like cilantro).

Hi Charmaine,
My husband has a good chili recipe but it's in his head so I'll have to ask him.
If you look at the Vegan Children section, there is a "How old are your children" poll where people talk about their kids.
