View Full Version : Vegan Bran Muffin recipe?

Hi everyone,
My name is Janice, and this is my first post. I've been a vegetarian for over 20 years. After recovering, then relapsing into anorexia/bulimia several times since age 16, after having been sexually abused, I became a vegetarian because of my weight issues, but good health, and my reverence for life put deeper meaning into it. Now that I'm 40, have three kids of my own, I've been able to show by example, how vegetarianism can be such a positive part of life, and while I still have a husband and two teens who eat meat, my youngest, the 9 year old, is following after her mom. I have a family history of heart disease and diabetes, and now that I'm getting older, I need to be more vigilant about my health. I want to make more things homemade, but I don't seem to be able to find my favorite food, bran muffins, in a recipe that is both vegan and low fat, ( and actually good!) Does anyone have such a recipe they wouldn't mind sharing? I would really appreciate it! I'm glad to be here, and I'm looking forward to getting to know some of you better! Take care, Janice

Hi Janice, thanks for sharing your story.
Here is a recipe for bran muffins which I haven't made for a while, but I think they work ok!
3 cups flour
1 and 1/2 cups bran flakes
2 tespoons baking soda
1/2 cup sultanas
1/2 teaspoon salt
2 cups soy milk
3 Tablespoons Molasses
3 Tablespoons other sweetener
1/2 cup oil
Mix together flour, bran, salt and baking soda. Add sultanas and soy milk. Melt together sweeteners and oil. Stir into dry ingredients to give a fairly firm mixture. Spoon into greased muffin tins, and bake at 350F for about 15 minutes. Cool for 5 mins in tin before removing.
Hope they turn out ok!
