Hi, I have heard of adding 1 tsp. of white vinegar or 1 tsp. of lemon juice per 1 cup of soymilk as a substitute for buttermilk. Has anyone ever tried this? Which method seems to give a flavor that is most similar to buttermilk? Thanks for your help!

I have. I find that vinegar thickens it more. I use a little bit more than a teaspoon per cup. Probably at least two. I make buttermilk biscuits this way. To.Die.For.

I'll have to look back and see where it came from. If it's something tweaked from a word of mouth recipe, I'll send it to you. If it came from a magazine or book, I don't think I can, unless I've changed it? Tell me what the criteria/rules are that apply to submissions. ;)

My understanding is that if you replace ingredients (subbing soy milk for regular milk or margarine instead of butter) then you are changing the recipe and it's now yours. Also, apparently you can have the same ingredients as another recipe but as long as your instructions are totally different, it is yours too.
This law prevents people from having a lock on, say, a recipe for chocolate chip cookies because the ingredients in many recipes are the same or just slightly tweaked.

Erin, did you get my e-mail? The first time I sent it, I got a "page not found" bulletin, so I sent it again. The second time, our power glitched a little, so I'm hoping that it went (even though I got a "sent" message.

I just read on your blog site that you are going to put off blog entries for awhile, while you start production on your cookbook. Did the recipe make it in time for the cut?
I'm anxious to hear if you tested them and also to find out what your opinion is.

I'm publishign the book through VegFamily, like I did with my first book. Not just a magazine, now VegFamily is an independent publisher. :)
I will be trying them soon. I love biscuits :)
