View Full Version : Seitan - what do you do with it?

I have heard of people using it in stir fries, but what else can it be used for? Also, what is a good brand. I've never tried it before.

Seitan is not a favourite of ours (we prefer Tofu and Tempeh) but I use it in stir fries sometimes (the "mock duck" variety- I am in the UK so I cannot help with brands :)) and that is good.

Also if you can get the really big pieces ("steaks") you can prepare them like steaks, i.e. fry or grill them.

We actually make our own seitan and eat it 1-2 times a week. One of my favorite ways (not the healthiest) is dipping it in seasoned flour and pan-frying it in olive oil, topped w/ nutrional yeast gravy, and served w/ mashed potatoes and corn on the side. We use it in stirfry as well, and eat them as burgers (I usually form the seitan in patties when I make it). It's very versitile and allows you to get creative w/ meals. I sometimes use it as a meat substitute in tacos or in my lasagne. It's good stuff!!!

I make my own as well and my husband and child love it. It's actually their favourite protein.

I use it in lots of different ways, but it seems nicest when braised in some way. So for instance if I make pasta -- cook the seitan in a lot of tomatoey and herby sauce with onions, olives etc and it absorbs all the flavour. Or in a curry again with an abundant sauce. My husband also likes it fried crisp in big pieces but I don't like it that way so much.

It's very good for you -- esp if you want to increase your protein intake.

Those are great ideas for seitan. By any chance, would either Teejay or mellie-bellie like to post their recipe for homemade seitan? I can't seem to find it in any of our stores here in Atlanta, and I'd love to try my hand at it.

I like Yves brand UnChick'n Nuggets made with seitan (instead of soy). So you might try a knockoff recipe for these at home.

I'd love to have recipes as well. I'm looking for new meal ideas and those sound perfect!
