Does anyone have a recipe for a good first birthday cake that they could share with me? Please?

Wacky cake:
1 1/2 cups flour
1 cup sugar
1 teaspoon baking soda
1/2 teaspoon salt
3 tablespoons cocoa
1/3 cup cooking oil
1 tablespoon vinegar
1 teaspoon vanilla
1 cup cold water
Mix dry ingredients in 9 x 9-inch pan. Make 3 holes; pour oil, vinegar and vanilla in separate holes. Pour water over all. Mix well with fork or hand mixer. Do not beat. Bake at 350 degrees for 30 minutes. Leave in pan and frost (with chocolate fudge icing) while still warm.

It's the only one I make anymore, even though there are vegan cake mixes available. This is the one my family requests. Whenever we have company, this is always the dessert (with powdered sugar dusted on top) and I usually have to give out the recipe. It's also such a simple recipe, my daughter likes to make it *all by herself* when she has friends come and spend the night. She feels like a big shot because it's from scratch! It's a very fluffy cake. It's meant to be left in the pan to ice or sugar. It's so light it may tear apart if you tried to flip it out of the pan, but I bet if you tried a bit (tweaking the liquid ingredients) it could be done.

Annie and Jamiebug, I have my mom's old wacky cake recipe (its similar if not the same). I line 2 round cake pans with parchment paper and bake the cake. Then I cut the rounds into pieces to assemble either a bunny or a cat (or whatever else you can imagine). Then decorate appropriately. We usually use frozen fruit, dates, coconut, etc. for eyes, whiskers, fur. Goes over great with a 5yo!

I've had wacky cakes, and they are very sweet and fluffy and popular. However, if you want a healthier, incredibly yummy, more natural foods flavor, try any of the cakes in "Great Good Desserts Naturally!" by Fran Costigan.
These cakes may be a bit more work, and they won't be quite as popular with people unaccostumed to eating whole grains (although almost everyone enjoys them), but for those who enjoy a natural foods diet, these cakes are fantastic. My baby went ga ga over the plain vanilla, when he had his birthday last month. As did his almost three year old sister. Even my parents, not in the whole foods camp, enjoyed it.

but Birthday cakes aren't supposed to be healthy! LOL

Personally, I much prefer the whole grain cakes. They're really special.
They have a lot of texture, and a more subtle, yet distinct sweetness.
And I want to celebrate my birthday as many times as possible.;)

Wacky cake tastes great with whole wheat flour and less sugar too! But I'm with you Sharon, when I do bake, I like to use natural sweeteners with some nutritional value like dates or blackstrap molasses.;)

P.S. It came out a little brownie like but we all liked it be very careful with measurements it can totally come out wrong if you try to alter it. I learned that the hard way. I tried to make a Mickey cake out of it for my dd's party with her friends later and it didn't work as MIL did not have baking soda. :( We ended up with a store bought mix one with egg. BLAH!!!

If your child is more into chocolate How it all vegan has a GREAT cake.......... all there cakes are good
but this chocolate cake will rock even the non vegans would. I know it looks like a lot of chocolate but believe me it is not too much it is ssssssoooo good. How it all vegan has a lot of great foods for kids!
3 cups flour
2 tsp baking soda
1/2 tsp salt
3/4 cup cocoa powder
3/4 cup margarine
11/2 cups dry sweetener
1/4 water
2 cups soy milk
2 tsp vanilla
350 F in a large bowl stir together the flour baking soda salt and cocoa powder. blend together margarine sweetener and water add this to the flour mixture along with the mild and vanilla mix until "just mixed" pour into a lightly oiled pan for 30 minutes
For icing
1 cup cold water
5 tbsp flour
1 cup dry sweetener
1 tsp vanilla
6 tbsp margarine
3 tbsp cocoa powder
in a small saucepan whisk together the water and flour constantly over medium heat until thick(like glue) once thick remove from heat and cool off by setting in a larger pan of cold water. While that is cooling mix vanilla sweetener margarine and cocoa powder mix till there are no lumps. cool for 30-60 minutes before using!

My kids LOVE the carrot cake from John Robbins.
I wouldn't give chocolate to a 1 yr old.

why wouldn't you give chocolate to a 1 year old. My daughter is 1 and I gave some and there were no side effects.

I'll take the carrot cake recipe when you get a minute! I love carrot cake, and my son's first birthday is coming up...although I haven't given him wheat yet, maybe I should go with a non-wheat cake? hmmm...any non-wheat cake recipes out there?

There is an amazing wheat-free, healthy banana cake in Vegan Family Favorites, it is sooooo good, it is pretty healthy although it tastes pretty decadent. I took it to a pool party last summer when I tested it, and ended up giving the recipe to every mom there!
I frosted it with a silken tofu/ chocolate chip frosting, but you could easily use carob chips or any other frosting.

The chocolate cake recipe in "Raising Vegan Children in a Non-Vegan World" is also a great recipe. I made it for my husband's last birthday. I frosted it with Hip Whip & strawberries (on the middle layer and on the top layer). All the Non-Vegans loved it too! Happy cooking with whatever you decide!
