View Full Version : All-call for Slow Cooker Recipes

Hi

Just received a 7-quart slow cooker as a gift. Think I plan to use it most for stews, soups, and making extra rice, beans, etc. to freeze.

I just have NO idea what ingrediants will tolerate the long cooking times -- & from what state. For example, will long-grain brown rice cook from its raw state? What amount of time would be needed? How about quanity?

Anyone know of any sources for vegan/veg slow cooker recipes?

hi sarah...well i do have a slow cooker recipe which i use quite regularly...i just cut up one carrot, two celery ribs, two potatoes, wedge one to two tomatoes and an onion and throw them all into the slow cooker with about a cup of lentils for about two to three hours...it's something i discovered by accident...without the lentils, it's basically a veggie broth recipe...
i think you could try www.epicurious.com and go to the recipe search but you might have to modify the recipes a little to make them vegan...good luck with it...

Vegan (or even vegetarian) recipes for the slow-cooker are hard to find. I have a vegetarian baked beans recipe (modified from one in "The Best Slow-Cooker Cookbook Ever"). I find this is good for pot-lucks - everyone will eat it, and I have something I can eat, too.

15 oz can kidney beans (drained)
15 oz can pinto beans (drained)
30 oz can chili beans
1/4 cup brown sugar (I use Sucanat)
1/4 cup ketchup
1 T prepared mustard
1/2 t liquid smoke (hickory)
1/3 of a green pepper, chopped
some onion, chopped

Cook on low in slow cooker for about 4 hours.

I am trying to write this recipe from memory, so I'm not 100% sure I got all the measurements correct (especially the liquid smoke).

Also, while checking Amazon.com to make sure I had the name of the cookbook correct, I found that there is a new Vegetarian Slow-cooker cookbook out. I don't know how many of the recipes are vegan, but it might be a place to start. The reviews mention a number of "nut-loaf" type recipes.
