I've posted on here about how fussy my kid are and I admit we went veggie for 2 months - but I just couldn't be happy about this so we're back to being vegan. Actually my kids didn't really like the veggie stuff!! Please has anyone got any recipes that'd be good for really fussy kids - things that don't have obvious nuts/ seeds, or any hints for me. I'd really appreciate it. Are there any good reipe books for kids??:p

One thing I make that the kids love, and which is an excellent way to give them vegies, is to cook some lentils (split red are less "obvious"), and very finely chop as many vegies as you like, then briefly stir-fry the vegies, add some cooked lentils and then season and add some coconut cream (as much as you think is a good consistency) and simmer it all for a few minutes. I serve it on rice, and my children love the creamy texture. I can even disguise vegies they won't normally eat, because they're finely chopped.
Another thing they love is Chickpea flour "omlettes". You may want to experiment with chickpea flour as it is very versatile. Add water to the flour slowly till it is really quite runny and almost watery. Season and add chopped mushrooms and herbs, and tomato, or just make it plain. Pour a large spoonful into a frypan with heated oil, and cook both sides. If it is a bit too tough it means you need more water in the mixture. Good luck!

Luckily my kids aren't too fussy, but I do find I can get more veggies into their diet if I puree some cooked veggies and mix it in the sauce for pasta or rice. My biggest challenge is getting beans into them. I pretty much make a hummus out of black beans or kidney beans. Somehow if the texture is smooth they like it better. I also have a recipe for chick pea brownies if you'd be interested. Kind of high in sugar but good for a treat.
