hi all,

one of my friends will be staying over at our house for a few days. she is a pretty conscientious and open-minded eater, but she is not veg. I've noticed that she seems to prefer not to eat refined carbs. can anyone suggest some high-protein vegan meals that we can make for her? are there any meals or foods that you guys have had success with feeding non-veg people? I have noticed that somethings that I think are absolutely delicious (tempeh is my favorite!) freak the non-initiated out a little! Any help would be greatly appreciated!

veggie chili and hummus is one of my favourite things to eat and it is fairly "normal" and high in protein. Hummus is also really cheap to make, and I think that homemade beats any brand of store bought.

-since it's summer, salad and grilled veggies, with a whole grain pilaf/salad goes over well.

-for protein, I'd stick with beans (add beans or chickpeas to the salad), or veggies burgers--a lot of non-veg people like a good veggie burger, as long as you don't try to tell them it's "just like beef." you can buy good whole grain buns.

-pasta made with whole grain spagetti (canneloni beans are good for added protein)

-lentil soup

-if you think she'd at least try it, scrambled tofu is a great way to make soy less scary. My favorite is to saute onions and mussrooms in olive oil, crumble the tofu in, season with a splash of soy sauce, garlic powder, cumin, chili powder, oregano, paprika, and cayenne (or whatever you have!) and then add salsa.

thanks for your answers! she enjoyed everything. I made a big batch of chilli, with garbazo/black/kidney beans, corn, chipotle and lots of seasonings with a side of cornbread. The next day, we had a "mezze" style lunch, with hummus, grilled veggies, salad, and grilled fruit for dessert. As you can see I basically just went by your suggestions. I didn't have time for the scrambled tofu, though, even though that's one of my faves. next time!
