Hey, all you other veg*n teens!

This forum has been kinda dead lately so I thought I'd start a new thread. Does anyone have any quick and easy meals for school nights or recipes they've invented that they want to share? Post 'em here!

Tonight I made a really good pasta dish w/ creamy sauce for dinner. I didn't really measure anything so I estimated quantities in the recipe posted below but I don't think it matters much. oh, also, I love to cook with wine (in risottos, pasta sauces, etc.) and my parents are fine with that, but depending on your parents (or the laws in your state if you don't live w/ your parents) you might have to omit it.

3/4 lb. spaghetti (or other pasta)
handful sundried tomatoes, thinly sliced
2-3 Tbsp. olive oil
a couple cloves garlic
1c mushrooms, chopped (or other veggies)
1/2 c white wine
1 c soymilk
1 c veg broth
2 Tbsp. flour

Cook pasta in boiling water- add sundried tomatoes about halfway through cooking time.

Meanwhile, sautee garlic, onions, and mushrooms for a few minutes in a frying pan. add wine, soymilk, veg broth, and flour and simmer until thickened, I think about 5-10 minutes. Season sauce w/ whatever is on hand (I never know what seasonings to use when I cook, so today I used oregano, thyme, and fajita seasoning. So basically a combo of Italian and Mexican! Sounds kinda weird but it tasted good.

I bet vegan "parmesan" would be great on this too but I didn't have any on hand today...

I always feel bad posting on here! I just turned 23. But I am a single college student on the go, so dangit I'm still like a teen.

Anyway Robin, that recipe sounds SO good! I'm definitly going to try it. Do you live with your parents? If so, do they sometimes eat what you make?

For our Family's Christmas brunch, I made a quick, easy, and delicious dessert/ breakfast snack.

Whole Wheat English Muffins
Vegan Butter ( I used Earth Balance)
A few apples ( I used sweet red)
Brown or Raw Sugar

Just add some thin slices of the apple on the toasted English muffin. Put some margarine on top of the apples and then sprinkle sugar over the top. Bake at 375 for about 10 min or until edges brown and margarine melts.

Everyone loved them! Definitly not very good for you, but delicious!

Hi Carla! Yeah, I live with my parents, I'm 15 (16 in July). My mom will eat one thing I make- chocolate chip bars. My dad is a bit more open-minded and will eat some of the dishes I cook. And I have two younger bros who are not veg but will eat anything (to the point of where I get mad and tell them that if they're gonna eat all my food then they can go to the store and buy me more ingredients!) :)

Your recipe sounds delicious for breakfast or family brunches, most likely something everyone (even my mom!) would try. Thanks for posting it! BTW, do you know which brand of Englsih muffins you used? (I haven't eaten them since I went vegan, I know I can't eat the kind my fam buys and have't gotten around to searching out a vegan brand!) hey robin...well i live in a rented room so my cooking is pretty limited...but i DO own a crockpot....the tiny ones for one person only. What i do every morning before going to school is to cut up veggies like potatoes, carrots, celery and an onion, toss them into the pot with about two cups of water and lentils or whatever beans i want then set it for two hours. When i get home from school at about five in the evening, i have a pretty decent meal waiting for me...it's a nice thing to come home to if you're living all by yourself...

Here are some cheap meal ideas that taste great

baked sweet potatoes topped with steamed broccoli

baked white potatoes topped with black beans, salsa, and vegan cheeze

vegetarian chili, just combine a can of drained kidney and black beans with a jar of salsa and a dash of chili powder over medium high heat

take large brown rice cakes, spread with tomato paste, vegan cheeze, and vegetables of choice (pineapple and broccoli float my boat) lay in a baking sheet, place in top rack of oven, and broil until toasty crisp and cheeze has melted. Vegan mini pizzas!

brown rice, frozen veggies, and marinara sauce

hummus and raw veggies on whole grain bread

low sodium fat free bean soups and a salad

whole grain cereal mixed with oil- free salt- free nuts, dried fruit, and wheat germ, drowned in rice or soy milk

Hey...I wouldn't say this is a meal but it's a good snack and tastes incredible.

2 cups self raising flour
30g cocoa powder
1 cup castor sugar
2/3 cup dark choc chips/soy/carob
2 pears
60g margarine/soy spread
1 egg replacer

Preheat oven to 180C

Mix dry ingredient together. Puree wet ingredients. Mix wet and dry together. Spoon into muffin cases, bake for approx 30 mins.

Hi everyone, I'm new to this board. Here are some of my favorite snacks/foods:

brown rice cakes spread w/ peanut butter and topped with tons of raisins and wheat germ.

banana slices topped w/ peanut butter, raisins, and wheat germ

frozen tortellinis (made by a company called SoyBoy) they are extremely good (and vegan). although they are made from white flour, they are easy to cook, have organic tofu, and actually have a cheesy-tasting inside. i like them w/ a bit of earth balanace margarine on top w/ pepper and dill served w/ frozen stir-fried veggies on the side. it's a very quick and yummy dinner!

homemade veggie soup! put any combo of veggies in some veggie broth w/ lots of seasonings and simmer until its done. i like potatoes, carrots, and celery in my soup. very nutritous!

Amy's Kitchen frozen meals are quick and tasty, but have alot of sodium. but they're good when you don't have time to cook

smoothies are awesome. i like chocolate rice dream combined with a large handful of frozen strawberries and a banana. blend until smooth. that is one of my favorite desserts.

put some water on the stove as hot as it goes for a while till it gets real hot, then take it down to about halfway. put in a bunch of spices (cumin, parsley, basil, lemon pepper, etc.) mix with a wooden spoon for a while then add chopped onions, chopped celery, carrot coins, and a cut up tofu dog, veggie dog, or substitute with tofu.
I put in soy sauce, tapatio sauce, and lemon juice. it is really good! ttyl

What is tapatio sauce? What does it taste like and where can you normally find it?

I can find tapatio sauce at any grocery store near the spices. it is a sauce that is not thick at all, it is red and is a mexican sauce. it is very hot. I live in california where there is a big mexican population so that maybe why I can find it, but I dunno. good luck. if you cant find it you might want to substitute with like chili powder or something like that.
