i havent made "checken" noodle soup, but it seems pretty easy. i found some vegetarian chicken flavored broth (in powder form) at the health food store. then i'd probably add sliced carrots, celery, and noodles. SIL made "chicken" noodle soup before and i think she used that white wave fake chicken. (it comes in the brown box and its a bit more chicken-y than the chicken style sietan, but that would probably work fine too.)
If you like dumplings, they would be super easy and would give the soup some body instead of chicken. You can make your own biscuit batter or even Bisquick (which I belive is vegan) and plop spoonfuls in there for the last 20-25 minutes of cooking. There are a lot of vegan chicken broths on the market, powdered as mentioned, or liquid in asceptic packages. Two things that I think really give that authentic kick are celery leaves, and a small pinch of dill. Now I'm hungry!
