I looked for "nutritional yeast" in my local Whole Foods store, but all I could find was Fleischman's and Red Star Active Yeast. Are active yeast and nutritional yeast the same thing?

No. Active yeast is what you use to make bread. Nutritional yeast is yellow and powdery/flaky. Nutritional yeast has the B12 you're looking for. Some people like the taste, others really don't.
Get the Red Star kind.

OK, well, I made mock chicken salad using active yeast, and I just ate a pita full of it. I guess that explains the tingly feeling it had. Should I expect any violent reactions?

Whole Foods does carry Kal and Twin Labs Nutritional Yeast.
Try the Kal Vegetarian Support Formula (great on popcorn and for vegan mac n "cheese". It has more complete vitamins etc. (they also make one labeled just "Nutritional Yeast")You have to look in the supplement / vitamin section for them.

One of our local health food stores only carries nutritional yeast in the bulk section. You may want to check there rather than in the prepackaged area if you haven't already. The nutritional yeast should have a slightly "cheesy" flavor & be yellow to light orange good sized flakes, as was mentioned above.
I attempted to make the "cheese" sauce and include it in a Vegan enchilada dish.
IMHO, it was revolting. It took a LOT of salsa to make the dish palatable. It resembled cheese in no way, shape, or form.
I will continue to add nutritional yeast to bread mixes and my Seitan dough, and as a boost to anything else I may cook....but I'm NOT going to look to nutritional yeast to provide a "cheese" flavor.
Vegan Rella makes a fantastic cheese-type product, and when I want a cheese substitute, I'll use that.

I work at Whole Foods (in Plano, Texas) and the Twinlab nutritional yeast that we carry contains whey. The nutritional yeast that we carry in the bulk section is vegan and contains many B Vitamins, but not B12. I personally order Red Star Nutritional Yeast online.

you are just using the wrong ingredients for Vegan enchiladas. I have a secret ingredient for that stuff it basically makes a nacho cheese. TACO SAUCE. i usually use the taco bell kind you can buy in the store, or even if i have enough packages, but anyways thats the secret ingredient. others ingredients in this cheesy wonder are soy milk,a little corn startch, little margerine, garlic & salt, oh yeah and nutritional yeast! i have no measurements i just tasted as i go along. you have to wisk it ofcourse to avoid clumping. everyone reading this should try it now, its the best thing ever.
