I have a crock pot but hardly ever use it because all of the recipes in the booklet are full of animal products. Does anyone use theirs?

I make sweet potatoes in there for Thanksgiving. But first I bake them, then put the potatoes in the crockpot and set it on high. The sweet potatoes change flavor and consistency. It's wonderful. But that's not what you're looking for, I'm sure. ;)

Hmm, these sound good. Do you leave them in their skins when you put them in the crock pot?

No, I bake em first in the oven... but this is for Thanksgiving so I usually bake 10 large sweet potatoes the night before Thanksgiving.
Then when the potatoes are fully cooked (usually 1.5 to 2 hours at 450 degrees) I scoop out the potato part and throw the skin away. I mush it all together in the crock pot, then stick it in the fridge overnight. Then I bring the whole crockpot to Thanksgiving at my aunt's house and as soon as I get there I plug it in and turn it to high. I stir occasionally.
But, sometimes we make this at home and it gives us sweet potatoes for days! I LOVE it in the crockpot. It does something to the sweet potatoes that baking in the oven doesn't accomplish. AND I never have to put anything in them like margarine or orange juice or what-not. They are wonderful just as they are and everyone loves em.
