hail seitan

does anyone have a recipe for making seitan? i know its a lot of work because i made it a several years ago but i dont have a recipe anymore. thanks

Chef Deb and Bryanna on Vegsource have plenty of good recipes. Bryanna's seitan ham is especially fabled.

If you don't have a bread machine, Bryanna also has a no-knead recipe for ham/turkey seitan, if I'm not mistaken.
