This soup is my favorite!! I make it every week, sometimes daily because it is so quick and simple to make.
Heat 2 tbsp oil over medium-high heat.
Add 2-4 tbsp chopped onion and 2-4 cloves minced garlic and saute 3 minutes, until tender.
Add 1 1/2 c canned chopped or crushed tomatoes
2 cups vegetable stock
1/3 cup cannelli beans
1 cup whole wheat pasta, small shapes (penne, spirals, elbows, shells)
1/2 cup zucchini (more or less)
1/4 cup chopped fresh parsley (to taste)
pepper (to taste)
Bring to a boil, reduce heat and simmer for 10-12 minutes until pasta and zucchini are cooked.
This makes 2 really large servings of soup. We tend to add a lot of garlic and onions to things and play around with the amounts now. My husband loves to add mushrooms and soy cheese to his soup also.
