Hi, we are having my sons first birthday party this sunday (13th of July) and will be having a campfire by the river as part of the celebration. Does anyone have any ideas about what to roast/cook/warm by campfire (other than veggie dogs), either savory or sweet - and vegan of course? Thanks

i think veggie baked beans are a tasty campfire food. :)

Veggie shish kabobs!!! We skewered veggies marinaded in teriyaki, like mushrooms, zucchini, pineapple chunks, cherry tomatoes, onion, bell pepper, red pepper and what ever else you can think of!

We like to bring fruit salad to BBQ's too.

I cut up all kinds of veggies including potatoes, bell peppers, onions, zucchini, etc, throw in some sliced up veggie dogs or other veg meat, Earth Balance soy butter or olive oil, and some salt and pepper. Place everything in foil, wrap it up into a tight envelope and put it on the fire...this takes a little while for the potatoes to get soft enough. Sometime I bake the potatoes ahead of time at home, and even cook some rice to bring and throw in with the veggies to heat up. I can't remember exactly how long it takes, you can always test it after about 5 minutes. Once it's done, either eat by itself, or put everything into a flour tortilla and eat like a burrito. Very Yummy and fun too!

Veggie dogs cut up and mixed in with Macaroni and Chreese is goooo-oooood. I'll pass on my special camping breakfast I *always* make....it's a HUGE hit. I boil potatoes ahead of time and pack in the cooler. First I warm up the potatoes in a pot, then I mix in Soyrizo. I scramble up some tofu and add that to the mixture. Then I add shredded veganrella and put the lid on the pot. The veganrella will melt a bit. Then I scoop it onto a tortilla, add a dollop of Sour Supreme by Tofutti and top it off with salsa. The BEST breakfast burritos in the world!!!! Of course evrything tastes better when cooked out side at a campsite:)
