I just discovered that my 3-year-old vegan daughter LOVES soybeans in the pod. Many of you probably already give your children this true natures treat. She was having so much fun eating them that I worried she'd choke while she was laughing...I had to settle her down.;)

Not only are they a perfect source of protein, they are high in iron and have some calcium. I'm really working on coming up with food combinations for her (and myself and husband) that are synergistic. I don't know why I've had such a mind block in making meals that combine Iron & Vitamin C and other vitamin and mineral combos that promote absorption..it's really not that hard, just takes a little planning. My biggest concerns are that we get enough Omega 3 & 6 fatty acids, Iron & Vitamin C, and B-12. I'm working on it...I have flaxseed meal that I sprinkle on cereal, put in shakes, and bread. I make fruit salads that are high in Iron and Vit C, etc. Right now, I'm taking B-12 supplements, but want to make sure my daughter is getting enough B-12...any suggestions?

Neat idea! As for the B12, I give ds B12-enriched soy milk and cereal (alternately with natural cereals), and occasionally silk yogurt or nutritional yeast. And he's still nursing some.

Vegma, thanks for the tips. I get soy yogurt, but it doesn't have B-12 in it...I'll definitely try the Silk brand.

Sheree, I gave you some incorrect information! Silk yogurt does NOT have b-12:o I thought it did, sorry. But it is high in calcium...
