Yesterday I attended a Diabetes Management class given at my health clinic. The lecturer is a Certified Diabetes Educator, and she was very upbeat, very informative. Part of the class included handouts, explaining the different types of foods, and how diabetics need to structure their diets. The most common structure is the "Exchange System," whereupon a person is allocated a certain number of exchanges to be eaten throughout the day. For instance, at breakfast, you may have one meat/protein exchange, two bread exchanges, and one fruit exchange.
I skimmed through the lists, just to see what I could find. Surprise, surprise, beans and lentils are included, as well as soymilk, tempeh, and tofu.
I briefly explained to the lecturer that I was following a Vegan diet for health reasons, per the PCRM study.
She stated that she was Seventh-Day Adventist, and remarked how many studies over the years have shown how SDA are healthier than non-SDA, and that they live on the average, ten years longer than those who follow the Standard American Diet.
Instead of feeling like a freak, she made me feel very included in the discussion!
I know I've tooted my horn here before about health care providers who are Seventh Day Adventists, and here's another example to cheer about!
(And I also remind folks that I am NOT a Seventh Day Adventist, and am not trying to convert anyone to that system of belief.)
