I am enjoying being a new vegan and experimenting with recipes. I only cook for myself so am always on the hunt for recipes for one. Just yesterday I made myself a bit of a 'mix up vegan chilli' which was quick and easy to do - especially if you are just in a hurry or have come home from work and want something simple and satisfying. Try this:
Put about 50-70g of brown rice on to boil for about 25mins
Chop and fry a small onion in a little olive oil in a saucepan for 2 mins.
Add one chopped green and one red pepper to the pan and saute for another 4 mins. You can also add any other veggies you fancy - courgette, celery,aubergine, chopped tomatoes etc
Add some tinned sweetcorn, a small tin of kidney beans, two teaspoons of tomato puree, salt, pepper and chilli powder to taste and enough water to barely cover the ingredients. Bring to the boil and simmer for 15mins.
Serve at once - instead of rice the chilli is also good with a baked potato or pitta bread etc.
I found this made ample and I even had a little left over to freeze!
