Hey everyone, I recently had the opportunity to hear Brenda Davis speak - her presentation was excellent!! I highly recommend making the effort to go to one of her lectures if she's in your neighborhood (
www.hope-care.org for the schedule)! This may be old news, as it looks like she began her tour in August and will be wrapping it up in a couple of months.
Hearing her speak was so validating in many ways. Even people that somewhat accept that we've chosen to not eat animals seem to think its extreme to exclude trans fatty acids from our diet. After hearing Brenda speak, I no longer feel I have to defend/apologize for doing so - trans fatty acids (hydrogenated oils, partially hydrogenated oils, shortening) change the structure of our cells!!! She cited several studies that prove that a healthy diet (and I'm NOT taking about the AHA diet!) can reverse chronic disease - fascinating stuff!
Oh yes, and she commented that the ADA 8mcg of B12 is not enough. We need 20mcg of B12 per day because of the way our body absorbs this vitamin. This means I need to bump up my family's intake, so thought I'd share in case you do too:-)
