sugar-free carrot cake

Every now and then someone posts looking for a sugar-free cake recipe. I tried this one yesterday and ds and I really like it (but then we love raisins and dates!). Next time I probably won't use as much ginger, but spices are easily adjustable

Vegma, love that recipe....i've been craving carrot cake for the last few days... me and my stupid food cravings...anyway does anyone have a decent vegan crean cheese frosting or something similar in texture to cream cheese frosting that doesn't require me to get vegan cream cheese? Because the only cream cheese they ever sell here is the cow thing....ick......

Feed that craving with great cream cheese frosting!

Hi Alexa,
I can relate to your cake craving. Though mine is for vegan cheesecake. Here's the recipe for you to make a great cream cheese frosting:

8 oz. tofu cream cheese, softened
1/3 cup Spectrum Naturals Spread or other non-hydrogenated vegan margarine
3 cups Veganized Powdered Sugar
1 t. vanilla
1/2 t. almond extract

Using an electric mixer or in a large bowl with a hand held mixer, place the tofu cream cheese and Spectrum Spread, and cream them together. Add the sugar, vanilla, and almond extract, and continue to beat the mixture until light and fluffy.

Voila!

Poor Alexa doesn't have access to Vegan cream cheese. But I bet that recipe would be yummy with just TOFU in place of the cream cheese! Not quite the same taste, but a wonderful texture and flavor!

Hi VOW,
You're right! Tofu is an excellent alternative.
I didn't fully realise that Alexis can't get
good cream cheese. So as a little apology for
to her for my oversight, here's a small change
in the recipe for getting tofu frosting "just so."

If you don't have a mixer, simply use a whisk to
get the frosting to the consistency you like:

8 oz tofu
3 cups Veganized Powdered Sugar
1/3 cup water
1 teaspoon vanilla
1/2 t. almond extract

1. Put sugar, water, and tofu into a double boiler over hot water.
2. beat constantly for 4 minutes.
3. Add the flavoring and continue cooking until frosting is of consistency to spread.
4. Remove from hot water and continue beating until cool.

Voila!

Yay ,you guys...anyway i found a recipe for vegan cream cheese over the internet...*gasp* i'm doing the bouncing-all-over-my-flat-in-happiness thing now...but i really appreciate the tofu recipe...didn't realize tofu could be used in the first place....hmmm...anyway, my fingers are itching and the kitchen calls(it's midnight now, see how desperate i am?)...haha...see ya....
