Gluten-Free!

The connotation that accompanies the words "gluten-free" usually implies deprivation and taste-free foods. These days, more and more people are developing food allergies due to an overuse of certain processed foods. Some of these allergens that seem to be found everywhere include wheat, dairy and citrus to name a few. Wheat gluten and soy are also the base of many meat alternatives that can be found in many vegetarian products, including seitan.

Gluten-free diets can seem challenging in a wheat- and grain-based world, and can seem extra restrictive when coupled with a vegetarian diet. Even though the term gluten-free might be a hard sell, especially to children, it is actually a much healthier, tastier and energy-yielding dietary practice.

Most people, whether they realize it or not, have some sort of gluten sensitivity. Foods that contain a high gluten content, such as wheat, rye and barley, can actually have a negative effect on the body. They can effect moods, produce excess mucus and drain energy and mental clarity. A good practice to help avoid these symptoms is to rotate meals around less common grains and starches. Try using millet, quinoa, amaranth or brown rice in place of bread or pasta or common cereals. Grain-free options such as organically grown corn tortillas, potatoes, yams or winter squash are also a satisfying and filling addition to most meals.

Try preparing gluten-free meals for the entire family and teach your kids about the importance of variety in their diet. When the entire family shares the same meal together, no family member is singled out and the gluten-free part of the meal goes unnoticed. What will get noticed are the added energy and improved mood and performance that will be experienced once gluten exposure is reduced. Gluten-free will denote a positive meaning and will actually be a preferred way of eating. Try it. You'll like it.
