Sensational Smoothies
by John Pierre

Imagine watching your child eating three servings of fruit and vegetables at one time! This may sound too good to be true, but it is totally possible thanks to smoothies. What better way to provide for the body's needs than with nutrient dense, antioxident rich, organically grown fruit?

Finicky eaters usually find comfort and enjoyment in smoothies since it is hard to resist a fun, smooth and cool treat. To boost the nutritional value, add a handful of kale, dandelion greens, or collards to a blended fruit smoothie. No one will notice a difference, especially if cherries, blueberries or other dark fruits are used. Dried fruit adds great texture and added sweetness to smoothies, particularly if you are adding dark, leafy greens or fruit that is not quite ripe. If you want to reduce the caloric and sugar content without reducing volume, replace some of the fruit with small amounts of celery or cucumber. Rice and nut milks are great alternatives to juice and also add a creamier texture.

Summer is an ideal time to take advantage of the abundance of seasonal and locally grown fruit that is not available in the winter. Get creative and add variety with foods that are not normally consumed, such as nectarines and peaches. Slice and freeze extra fruit to use in the winter months. A great way to enjoy slightly overripe melons is to chill them and blend them. Blended cantaloupe, honeydew and watermelon are not only bright and colorful, but are also refreshing and delicious, especially on a hot day. They need to be consumed right away since they do not store well.

Get your blender working and enjoy some of the bright and beautiful offerings of summer!
