Celentano's Vegetarian Selects has a wonderful line of frozen vegetarian entrees. They currently have four vegan selections, our favorite of which are the Eggplant Rollettes. Eggplant is wrapped around a mixture of tofu, spinach, and spices; all covered in a yummy tomato sauce. It cooks well in the microwave or you can use a conventional oven.

Celentano's Vegetarian Selections sell for under $4.00 in your grocer's freezer section.

For those nights when you don't want to cook, popping one of these into the microwave is heaven. The taste is superb! We also enjoy the Broccoli and Shells selection. Having several of these in your freezer is a great way to ensure everyone is happy at dinner time.
