Vegan Recipes - Appetizers

Cashew Cheese

Ingredients:
  • 1/4 cup cashews
  • 1 jar pimientos (the darker, the better)
  • 1 teaspoon lemon juice
  • 2 tablespoons nutritional yeast flakes
  • 1½ tablespoons cornstarch
  • 2 cups water
  • 1 tablespoon mock chicken seasoning
  • Garlic powder, to taste
  • Onion powder, to taste
  • Salt, optional
Directions:
In a good blender add dry ingredients first, then wet ingredients. Mix well. Mix until it looks smooth (1-2 minutes). It will thicken as you blend.

Pour contents into a saucepan on medium heat. Stir constantly until it thickens.
