Power Smash

Ingredients:
  • 1/2 sweet potato, peeled and sliced
  • 1 medium to large carrot, peeled and chopped
  • 5 oz. plain soy milk
  • 1/2 jar of plain cooked beets, sliced or whole (not the pickled variety)
  • 2-3 Tablespoons beet juice from the jar (add as needed for easy blending)
  • 1 Tablespoon flax seeds
  • 1 teaspoon blackstrap molasses
Directions:
Boil the yam and carrots together until soft; drain. In a blender, combine all ingredients and puree until creamy. Pour and serve warm, or refrigerate for future use.

Comments:
This recipe makes 4-6 servings of "pudding" (may want to double the molasses and/or add nutmeg & allspice for that use), or soup. For soup, the texture should be creamy and viscous, but thinner than pudding. Serve warm or cold, depending on the use.

Liam's Power Smash Smoothie

Ingredients:
  • 1/4 cup plain soy yogurt
  • 5/8 cup plain soy milk
  • 1/8 cup plain rice milk
  • 1 scoop powdered soy protein isolate
  • 1 teaspoon natural vanilla extract
  • 1 teaspoon blackstrap molasses
  • 4 Tablespoons Power Smash (see recipe above)
  • 1/4 teaspoon allspice, or to taste
  • 1/4 teaspoon nutmeg, or to taste
  • 2-3 ice cubes, if desired
  • 1 Tablespoon wheat germ, optional
  • 1 Tablespoon roasted pumpkin or sunflower seeds (blend until ground fine), optional
  • 1 teaspoon flaxseed oil, optional
Directions:
Combine all ingredients except molasses and ice, and blend until smooth. Blend in molasses. Add ice, and blend on high until thoroughly incorporated. Pour and serve.

Comments:
Named for my little boy, this recipe came about to help support B12 intake and absorption (the sweet potatoes, beets, and optional pumpkin seeds all serve this function).
