Vegan Recipes - Side Dishes

Mexican Flax Crackers

Ingredients:

  • 2 cups Flax Seeds, covered and soaked in water
  • 1/2 cup Sun Dried Tomato Paste - dried tomatoes soaked and pureed with water
  • 1 teaspoon Cumin Powder
  • 1/2 teaspoon Chili Powder
  • 1/2 teaspoon Coriander Powder
  • A pinch of chipotle or cayenne powder
  • 1/4 cup freshly chopped cilantro


Directions:
Soak Flax seeds in a mixing bowl with water. Let them stand, completely immersed for 15-30 minutes or until the water is absorbed. Add all other ingredients & mix well. On teflex or non-stick dehydrator sheets spread mixture evenly & cut into "chips" that will be easy to break apart after drying. Dehydrate for about 8 hours at 118 degrees or less depending on how thick they are. Flip them over once to finish drying. Dehydrate until crispy.
