In a medium pot, bring some lightly salted water to boiling. Add the pasta and cook for about 2-3 minutes less than what the package says. The pasta should not be cooked all the way. Start microwaving the frozen vegetables according to their packages. Add as much of each as you like. I put in about 1-2 cups broccoli, 1/4-1/2 cup of the peas and edamame, and about 1/2 cup of cooked spinach. Don't cook all the way; stop when they are warm, but still crisp-tender. Drain the water from both the pasta and vegetables. Add the microwaved vegetables, beans, and sauce to the pasta pot. Return the pot to your stove at its lowest setting and let it barely simmer for 25-30 minutes. Season with salt, and squeeze on some flax oil. Comments: I like "Seeds of Change" Vegetable Garden sauce. Also, play around with the ingredients. The staples in this dish that you can't do without are the beans, pasta, pasta sauce, and some veggies. But add whatever kind of veggies you want, frozen or not.
