Vegan Recipes - Entrees

Pro Pasta Sauce

Ingredients:
  • 1/2 onion
  • Fresh garlic to taste
  • 1/2 to 1 block extra firm tofu
  • 3-4 tablespoons olive oil
  • 1 tablespoon balsamic vinegar, or to taste
  • Basil
  • Oregano
  • 1 jar (26 oz.) pasta sauce or homemade
  • Hot, cooked whole grain pasta
  • Nutritional yeast flakes, or vegan parmesan
Directions:
Finely chop onion, thinly slice garlic and crumble tofu. Sauté together in a little oil until the garlic and onion are almost, but not completely cooked.

In a separate pan, combine the oil, vinegar, spices and sauce. Warm over medium heat. Add the tofu, onions, and garlic.

Serve sauce over pasta, and top with nutritional yeast or vegan parmesan.

Comments:
Other veggies can be sautéed and added to the sauce with the tofu. I like using black olives, mushrooms, carrots, spinach, and shredded zucchini.
