Vegan Recipes - Salads
Mock Chicken Salad

Ingredients:
- 1 lb. firm tofu (freeze, then thaw in refrigerator, then steam over water for a few minutes which will give the tofu a chewy texture). When cool, squeeze out as much water as you can and crumble into small pieces.
- 1/3 cup minced red onion
- 1 large rib of minced celery
- 2 tablespoons nutritional yeast
- 1 tablespoon minced parsley
- ½ teaspoon garlic powder
- ½ teaspoon ground thyme
- ¼ teaspoon black pepper
- ½ teaspoon salt
- 1 cup veganaise, or nayonaise
Directions:
- Mix all the above ingredients together in a bowl.
- Chill and serve.
Suggestions: Use as a sandwich filling, on crackers or tortilla chips, on salad, or to stuff a tomato.
